Last night I was watching Keeping Up With the Kardashians
(sorry, guilty pleasure) and had a craving for some dessert. For the record, I
don’t have ice cream, candy, dessert-like things in the house because I think I
would end up eating them for dinner… But as I was watching Kris freak out about
Kim and North West, I decided that some Greek Yogurt and Granola would satisfy
my dessert craving perfectly! I didn't have granola at the time, but not to worry!
I found this recipe on Pinterest a while ago. Every time I
make it I try and tweak it a bit and I’ve always loved what I end up with! This time I added
chocolate chips and flax seed, yum!
Here is what you’ll need:
- 4 tbsp. peanut butter (creamy or crunchy, your choice)
- 4 tbsp. honey
- ½ tsp. ground cinnamon
- ½ tsp. vanilla extract
- 1 tbsp flax seed
- 2 cups old-fashioned rolled oats (don’t mistake for “quick oats”)
- Extras:
- Chocolate Chips
- Dried Fruit
- Nuts
- Chia Seeds (or any kinds of seeds)
The possibilities are endless
Time to get started:
- Preheat oven to 325 degrees Fahrenheit. Spray a baking sheet with nonstick spray. You can also use parchment paper (I didn’t have any).
- In a bowl, combine peanut butter and honey (I used agave because I couldn’t find the honey… Poo Bear must have been sneaking around) and heat in the microwave for about 30 seconds. Stir. Add vanilla, cinnamon, and flax seed. Stir, again.
- Next add the oats. Stir/mix so that everything is covered. This is when I decided to add some chocolaty deliciousness to the mixture. I added some mini chocolate chips and some white chocolate chips. Smart decision, but I think next time I’ll melt them with the peanut butter and honey.
- The mixture may seem a little dry but I like my granola crunchy. Feel free to experiment and discover your perfect consistency! Once you’ve mixed everything together, spread it onto the cookie sheet. Bake 10-15 min.

- Like I said before, this is so quick and easy! I was able to enjoy dessert and catch the end of the Kardashian’s episode. Perfect timing, if you ask me!
