Peanut Butter Granola


Last night I was watching Keeping Up With the Kardashians (sorry, guilty pleasure) and had a craving for some dessert. For the record, I don’t have ice cream, candy, dessert-like things in the house because I think I would end up eating them for dinner… But as I was watching Kris freak out about Kim and North West, I decided that some Greek Yogurt and Granola would satisfy my dessert craving perfectly! I didn't have granola at the time, but not to worry!  

I found this recipe on Pinterest a while ago. Every time I make it I try and tweak it a bit and I’ve always loved what I end up with! This time I added chocolate chips and flax seed, yum!

Here is what you’ll need:
  • 4 tbsp. peanut butter (creamy or crunchy, your choice)
  • 4 tbsp. honey
  • ½ tsp. ground cinnamon
  • ½ tsp. vanilla extract
  • 1 tbsp flax seed
  • 2 cups old-fashioned rolled oats (don’t mistake for “quick oats”)
  • Extras:
  • Chocolate Chips
  • Dried Fruit
  • Nuts
  • Chia Seeds (or any kinds of seeds)

The possibilities are endless

Time to get started:
  • Preheat oven to 325 degrees Fahrenheit. Spray a baking sheet with nonstick spray. You can also use parchment paper (I didn’t have any). 

  • In a bowl, combine peanut butter and honey (I used agave because I couldn’t find the honey… Poo Bear must have been sneaking around) and heat in the microwave for about 30 seconds. Stir. Add vanilla, cinnamon, and flax seed. Stir, again.


  • Next add the oats. Stir/mix so that everything is covered. This is when I decided to add some chocolaty deliciousness to the mixture. I added some mini chocolate chips and some white chocolate chips. Smart decision, but I think next time I’ll melt them with the peanut butter and honey.



  • The mixture may seem a little dry but I like my granola crunchy. Feel free to experiment and discover your perfect consistency! Once you’ve mixed everything together, spread it onto the cookie sheet. Bake 10-15 min.

This is after about 12 min. You can kind of see the color difference. Also, if you add chocolate and don't melt it prior to baking, be aware that it might burn and stick to the pan.

  • Like I said before, this is so quick and easy! I was able to enjoy dessert and catch the end of the Kardashian’s episode. Perfect timing, if you ask me!
