Dinner and … A Walking Dead Marathon?


New Year’s Day was my first home cooked meal of the year. I found a wonderful recipe on skinnytaste.com for a Butternut Squash and Spinach Lasagna. It was delicious and not too difficult to put together. 

Jordan’s parents drove down to KW (from New York!) to enjoy a couple months of the Florida Sunshine (just missing the onset of Hercules) so we decided to whip up a nice dinner at the boy’s house. It was a treat having Sharon (Jordan’s mom) help me cook. She mentioned that she likes it when there are people to help put together a meal and I couldn’t agree more. It makes multitasking so much easier!

In all the excitement of wanting to serve the lasagna while it was still hot, I forgot to take a picture! Rookie blogger move, right? It looked pretty similar to the pictures from the recipe I found online, the only thing I did different was I used whole-wheat lasagna noodles instead of regular ones.

After dinner we ended up watching HOURS of the New Year’s Walking Dead Marathon on AMC. I haven’t watched the show before but Jordan really likes it. I can’t believe how gory it is! Not really my kind of show…

I am so grateful I was able to make it to New York and California over the holidays and begin the New Year spending time with family and friends. Time to head back to Miami and get some work done.
